Shallots

The shallot (Allium ascalonicum), also known as ash garlic,
is a plant from the garlic family (Alliaceae).

Usage

Shallots have a slightly more refined flavor than regular onions and are also more digestible. Even more so than onions, shallots irritate the eyes when cleaning and chopping.
A small onion with a refined flavor, it's perfect for a variety of dishes. The high dry matter content gives shallots a sweet taste after stir-frying.

Species

There are several varieties of shallots with varying shapes (round or elongated) and colors (from brown to gray). Agro Centre Holland offers medium-sized seed shallots (Conserver) and banana shallots, also called Echalion.

Cultivation

Uniquely, we use shallots grown from seed. Compared to conventional shallot production, where shallots are grown from bulbs, this ensures a guaranteed virus-free start.

Shape and color

The flesh has a soft pink sheen. Shallots are smaller than regular onions.
